    Chocolate Muffins

    My mother was talking about Chocolate Muffins yesterday so I told her I would make her some today.

    I just pulled up a recipe on AllRecipes….very simple. Not too sweet.

    2 Cups Flour
    1 Cup White sugar
    1/2 Cup unsweetened cocoa
    1 Tsp Baking Soda
    3/4 Cup Chocolate Chips
    1/4 Cup Chocolate Chips to top
    1 Egg
    1 Cup plain yogurt
    1/2 Cup milk
    1 Tsp Vanilla
    1/2 Cup Vegetable Oil

    Turn your oven to 400 degrees
    Oil your muffin pans and line with paper muffin cups (if you have them)
    Mix Flour, sugar, cocoa, baking soda and chocolate chips in one bowl.
    In a separate bowl mix yogurt, oil, milk, egg and vanilla. After mixing well pour into the dry ingredients and mix all together. (its thick)
    Fill your muffin cups 3/4 full and sprinkle with remaining chocolate chips.

    Bake for 20 minutes or until a toothpick inserted into the middle comes out clean.
    Let cool 10 minutes before diving in.

    Left over cookies bought from a bakery. No way would I have time to bake today.
    Gold rimmed bowls $38 for the both of them from Home Goods. Couldn’t pass that up 🙂
